What: Catching up on the last month. Updates to include the following: Erin’s trip to Guatemala, Jenny’s job and recent maid-of-honor-ness, Shannon’s trip to Montana and her mid-quarter life crisis, and Monkey’s update on her BF moving to the bay! Lots to talk about, and I hope the food is good!

We know…it’s been a while since our last “official” Ladies that Dine dinner. Shannon was in Montana for a week, and Erin has been in Guatemala for 2! There were a few unofficial meetings, but not all ladies were there. Once Erin gets back and settled in, we will resume Ladies that Dine! This time Jenny and Monkey will host, followed by Erin, and then Shannon.

Last night we celebrated both Jenny and Erin’s birthday with a Ladies that Dine dinner. Whheee! Erin hosted and made an amazing egg torte thing (like a quiche) that had corn and peppers in it, topped off with some tomatoes, sour cream and avocado. It was quite deeelish! Prior to dinner, Jenny and Erin opened up birthday presents, and we finished the night with some yummy vanilla cake w/ raspberries and chocolate frosting. Shannon made the cake (actually, Betty Crocker did), and decorated it herself. Jenny said it reminded her of her 6th birthday cake. Way to go, Shannon!

The next Ladies that Dine dinner will be hosted by Shannon after she returns home from her work/vacation trip to Montana. Keep checking back here for the date!

It’s been a few weeks since the ladies have dined, therefore we were all looking forward to our July 9th dinner. Monkey was the host, and she prepared an AMAZING light summer meal! We all helped prepare the dishes, but basically this was what we had:


- Peach Caprese Salad

- Fresh Corn on the Cob

- Homemade pasta with sauteed mint zucchini

- Mango Mochi for dessert!



































The peach caprese salad (in my opinion) was the best part of the meal! Diced peaches replaced tomatoes – so the salad consisted of peaches, mini mozzarella balls, and basil with a light vinaigrette dressing. There may have even been some mint in there, but I’m not sure. As always, it was a GREAT dinner! Even though it was blazing hot in Oakland, we all had a good time!

Except these ladies are ladies who dine. They are located in Tulsa, OK. Maybe one day we could all dine together??

Sorry Erin, but the ladies had dinner last night without you! (we still love you though!)

Jenny, Monkey, and Shannon had an impromptu dinner last night – cold peanut noodles, yum! Shannon found the recipe on Apartment Therapy’s The Kitchn. The noodles were a mix of thai rice noodles and speghetti (that’s all that was in the cupboard) with a light creamy-peanuty sauce. We topped them off with cucumbers, roasted peanuts and scallions. Check out the recipe here. YUM!

One note, obviously we didn’t use chicken in the recipe (though Shannon will next time she makes it for Paul). We also didn’t use any sesame seeds (we used peanuts instead), and beware of using too much ginger, as the sauce got a little sour (Jenny had to doctor it up a bit using her Thai-inspired skills). Overall it was a great impromptu dinner, and we’re all looking forward to our next scheduled dinner, when all 4 crazy girls will be present.
