1/2 cup lentils
2 1/2 cups water
1 medium carrot, chopped
1/2 cup chopped spinach
1 medium potato cut into 1 inch cubes
1 medium tomato, chopped
1 celery stalk, finely sliced
2 large cloves of garlic, chopped
1 teaspoon olive oil
2 teaspoons cumin
1/4 teaspoon salt
splash of lemon juice

You can also toss in chopped onion or leeks depending upon what you have, as well as any spinach-like greens!

1. Bring the lentils and water to boil in a medium pot. Reduce heat to simmer, cover and cook for 30 minutes. Meanwhile prepare the veggies.
2. Add the veggies, garlic and oil. Cover and continue simmering soup for 20 more minutes. Add the cumin and salt and cook for a few more minutes, or until veggies are tender enough.
3. Serve immediately with a splash of lemon juice and grated cheese of your choice. Enjoy!
